Our Story
Born in the 1920s in small-town Oklahoma, Mamoo grew up during some of the toughest years in American history. By the age of nine, she was already hard at work in her mother’s café — a humble little spot with a dirt floor in St. Louis, Oklahoma. Her mother, known to everyone as Big Mamma, ran the café during the oil boom, feeding hardworking folks who came through town chasing opportunity.
We Will Never Use
(1) Flavor Enhancers
- Monosodium Glutamate (MSG) – boosts umami flavor
- Disodium Inosinate – works with MSG to intensify flavor
- Disodium Guanylate – similar to inosinate; enhances savory taste
(2) Preservatives
- Sodium Benzoate – inhibits bacterial growth
- Potassium Sorbate – prevents mold and yeast
- BHT (Butylated Hydroxytoluene) – prevents oxidation of fats and oils
- BHA (Butylated Hydroxyanisole) – similar antioxidant function
(3) Anti-Caking Agents
- Silicon Dioxide – prevents clumping
- Calcium Silicate – absorbs moisture
- Sodium Aluminosilicate – keeps powders free-flowing
(4) Color and Flavor Additives
- Artificial Colors (FD&C Red 40, Yellow 5, etc.) – create bright or consistent hues
- Artificial Flavors – mimic natural ingredients
- Maltodextrin – carrier for flavors or colors
(5) Salt Derivatives
- Sodium Nitrite / Sodium Nitrate – used in curing blends for meats
